
Undulating north facing countryside, gravely loam soils, an elevated site and long ripening season, are the characteristics that give our wine its individual quality.
We have planted a mix of French, Italian and German grape varieties that we appreciate and believe will thrive in this region.
It is already evident the Bordeaux varieties of Merlot and Sauvignon Blanc are particularly well suited to this region and we are continuing this theme with Cabernet Sauvignon, Cabernet Franc and Malbec. Our Riesling is also proving to be very popular and we have similar hopes for Gewurtztraminer.
Not all will ripen to perfection every year but the excitement of organic farming is the experience of making the best wine we can in a given year.
Sulphur
We keep the addition of sulphur to an absolute minimum – a small fraction of what is allowable. Hand picking and good quality fruit allow us to do this.
Not many people know that sulphur has been used in wine making since Roman times yet it seems that recently some people are quite sensitive to it. We question whether sulphur is sometimes taking the blame as so many processing aids are in common use during the fermentation and do not have to be mentioned on the label. Our philosophy and the organic standard do not permit us to use any synthetic processing aids.
Cork
At present we remain committed to using cork for two reasons – firstly the alternatives all rely on a synthetic seal and secondly we believe in the charm and ritual associated with removing a cork. As screw caps have become so commonplace the cork suppliers are greatly improving their quality control and we are able to source good quality, reliable cork. Naturally we are happy to replace corked wines, no questions asked. |
